Anchoïade with Greens and Mozzarella

300g green beans
1 bunch of French radishes
3 buffalo mozzarellas
1 clove garlic
4 good-quality anchovies
100ml good quality extra virgin olive oil
Splash of red wine vinegar
Salt & pepper
Bring a medium pot of salted water to a boil. Add the beans and once it comes back to boil remove and chill in iced water.
For the Anchoïade, crush the garlic with salt in a mortar and pestle until it becomes smooth. Add the anchovies and pound into garlic to form a thick paste. Drizzle in oil and stir at the same time to incorporate. Mix in the vinegar, pepper and a small pinch of salt if needed.
Pour sauce into a bowl and place in the center of a platter. Arrange torn mozzarella, beans and radish around Anchoïade.
