Cook Time 15 minutes
1 cup milk
1 cup self-raising flour
Caster sugar, to taste
Zest of ½ lemon
Salted butter and maple syrup, to serve
Mix the milk, flour, sugar, egg and lemon zest together in a bowl.
Melt the butter in a crepe pan and dollop tablespoons of mixture into the pan so that they are evenly spread. After a minute or once golden on the bottom, carefully flip the pikelet to cook on the other side.
Serve immediately with salted butter and maple syrup.
