Baked Eggplant with Sweet Chilli Sauce

Cook Time 45 minutes


2 large eggplants
1 cup of sweet chilli sauce
2 tbs. mirin
1 tbs. soy sauce
2 tbs. sesame seeds, toasted
50ml water

3 sprigs mint or coriander


Pre heat the oven to 180C.

In a bowl mix the chilli sauce with the mirin and soy sauce.

Cut the eggplants in half and drizzle with the sauce. Place the eggplants on a baking tray. Pour 50ml of water into the base of the tray and bake in the oven for 35 minutes or until the eggplants are very soft and golden brown. Sprinkle with sesame seeds and garnish with mint or coriander.
