Cheesy Ham and Corn Bites

400g can corn kernels, drained

6 eggs

½ cup thickened cream

100g smoked ham, chopped

1½ cups of freshly grated cheddar cheese

Pinch nutmeg

Salt & pepper


Preheat the oven to 150C and grease a 12-hole, ⅓ cup capacity muffin tin with oil. Alternatively, to make washing up easier add 12 patty pans to the muffin tin.

In a food processor pulse the corn 3-4 times to roughly chop. Whisk eggs and cream and add to corn with 3/4 of the cheese, the ham, salt, pepper and nutmeg and pulse 1-2 times to combine. Divide the mixture between each muffin hole and sprinkle over the remaining cheese.

Bake in the oven for 20-25 minutes or until just set.
