Cook Time 10 minutes
2 tbsp egg mayonnaise
pinch white pepper
pinch cayenne pepper
1 tsp. dijon mustard
juice of half a lemon
Place eggs in a pot of cold water. Bring to the boil and cook for 4 – 5 minutes.
Halve the eggs lengthways. Separate cooked egg whites from the egg yolks. Reserving egg whites for presentation.
Mash egg yolks and then add all remaining ingredients. Mix until well combined and smooth.
Transfer mixture to a piping bag and pipe into the reserved egg white halves.
