Dry-Rub Chicken Drumettes

1 tsp extra virgin olive oil

1kg chicken wings, jointed and wingtip removed

3 tbsp stock powder

1 tsp dried oregano

Pinch cayenne

Sour cream dressing

80g blue cheese, crumbled

3 tbsp buttermilk

3 tbsp sour cream

1 tsp apple cider vinegar

½ tsp stock powder


Preheat the oven to 180°C.

Place wings on a tray and drizzle with olive oil. Combine the stock powder with oregano and cayenne pepper and sprinkle all over chicken, rubbing in so they are all combined. Separate wings so they’re in one single layer.

Roast in the oven for 25-30 minutes or until crisp and golden.

For the dressing, blend everything together.

Serve wings with dressing on the side.
