Frozen Breaky Bars

Cook Time 1 hour + freezing time

Servings 6


5 tbsp honey

⅓ cup peanut butter

2 tbsp store-bought applesauce

¾ cup oats

½ cup rice puffs

Pinch salt

300g mixed fresh berries

1½ cup of Greek-style yoghurt

1tsp vanilla bean paste


Line a 20 x 20 (approx.) brownie tin with 2 sheets of cling film.

In a mixing bowl combine 2 tablespoons of honey, peanut butter, apple sauce, oats, rice puffs and a pinch of salt. Press the mixture into tin and ensure it’s even.

Put the berries and 2 tablespoons of honey into a small saucepan with 2 tablespoons of water and cook for 5 minutes or until they just start to break down. Cool to room temperature then spread over the oat base. Place in the freezer for 1 hour.

Combine yoghurt with vanilla and remaining honey. Spread over the berry mixture. It’s ok if it ripples a bit. Cover with cling film and place in the freezer for 2-3 hours before portioning into bars and serving.
