Kangaroo Steak Sandwiches

500g kangaroo steaks
1 sprig of rosemary, leaves finely chopped
4 oval Turkish bread rolls
4 tbsp mayonnaise
4 tbsp tomato relish
1 tomato, sliced
Lettuce leaves, to serve
Salt & pepper
Preheat the oven to 180C. Wrap the bread in foil and heat into the oven for 5-10 minutes.
Heat grill over a medium-high heat. Coat steaks in oil and season with salt, pepper & rosemary.
Cook for 4–5 minutes on each side for a medium-rare finish, or to your liking. Rest for 10 minutes before slicing.
Cut the bread rolls open and spread mayonnaise on one side and relish on the other side. Add lettuce, tomato and sliced kangaroo. Top each with the other side of the bread and serve.
