Naan French Toast

1 tsp extra virgin olive oil

15g butter
3 eggs
150ml thickened cream
1 tbsp maple + extra for serving
Pinch cinnamon
4 mini naan
Icing sugar, for dusting
Strawberries, cut into quarters, to serve


In a large bowl, whisk the eggs with the maple syrup, cinnamon and the cream. Dip each slice of naan in the egg mixture. Melt the butter with the oil in large non-stick pan over a medium heat and fry the slices of eggy naan bread in batches. Cook for 2 minutes on each side or until golden in colour.

Dust the bread with icing sugar. Serve with fresh strawberries and extra maple syrup.
