One-Pan Sausage and Capsicum Big Brekky

1 tbs. olive oil
1 chorizo, split in half
2 rashers of streaky bacon
2 pieces of roasted capsicum in oil, drained and roughly chopped
10g porcini mushrooms, rehydrated in warm water then drained
2 eggs
4 cherry tomatoes
4 basil leaves


Preheat the oven to 180C.

Heat a large skillet pan over medium-high heat and add the sausage and bacon. Cook for 3-4 minutes before adding the capsicum, mushrooms and tomato. Cook for a further 2 minutes and then make two gaps in the pan and carefully crack in the eggs. Cook for a minute and then place in the oven for 5-7 minutes to finish off cooking the eggs.

Remove from the oven and tear the basil over the pan. Serve immediately.
