One Pot Hearty Vegetable Pulse Pasta

250g pulse spaghetti 

1 bunch of broccolini, chopped roughly

10 small Brussel sprouts, cut in halves

1 cup baby spinach

½ cup peas

¼ cauliflower, cut into florets

1 zucchini, sliced into thin rounds

4 anchovies

½ cup semi-dried tomatoes, chopped

1 long green chilli, chopped finely

1 garlic clove, cut thinly

½ cup chopped flat leaf parsley

½ cup basil 

¼ cup mint

½ lemon, juiced

¼ cup olive oil

1 cup pecorino, grated

Salt and pepper


In a pot of boiling salted water, add the pasta and cook as per packet directions. Halfway into pasta cooking time, add vegetables into the water and cook.

Place anchovies, cheese, spinach, tomatoes, chilli, garlic, parsley, basil, mint, olive oil, a pinch of salt, and lemon juice into a food processor and blend until smooth.

Strain pasta and veggies and put back into the pot.

Add anchovies and herb mix over the pasta and mix together. Season with salt and pepper and finish with pecorino.

Serve and enjoy with family and friends!
