Passionfruit & Lychee Margarita
Prep Time 10 minutes
¼ cup passionfruit pulp
125ml of tequila
Juice 1 lime, plus 1 extra
Salt, glass rims
150g frozen lychees, defrosted and chopped
½ cup of sugar
¼ cup of water
For the lychee syrup, bring all the ingredients to the boil and boil for 2-3 minutes. Cool completely then measure out 15-30ml depending on how sweet you like it.
Rub lime around glass rims and press into salt.
Add ice to a shaker and add measured syrup, passionfruit pulp, tequila, Cointreau and lime juice. Shake well.
Pour into glasses.
