Pork Cutlets with Tofu Dressing
Cook Time 25 minutes
4 x 200g pork cutlets, trim off all fat
Salt and pepper to season
1 cup silken tofu (you can also use avocado)
2 tbsp extra virgin olive oil
2 cloves garlic
1 tsp honey or Agave nectar
½ tsp pepper
4 tbsp fresh lemon juice
1 tbsp of miso paste (gluten free option)
¼ cup fresh herbs
Water to thin if necessary
Heat a griddle pan or BBQ to a medium to high heat. Cook the pork on each side for approx. 4-5 minutes.
In a food processor blend all the tofu ingredients until smooth.
Serve the pork with steamed vegetable and the tofu dressing pour over the top.
