Pumpkin, Sage, Walnut and Goats Cheese Spelt Spirals Salad

250g San Remo Spelt Spirals
¼ cup small sage leaves
10 pieces grilled pumpkin, bite sized pieces
1 cup roasted walnut meat
250g goat’s cheese, crumbled
150g baby cos leaves
5 tbsp extra virgin olive oil
5 tbsp white balsamic vinegar
Salt and cracked black pepper to taste

Cook pasta according to packet directions. Once cooked, refresh under running cold water and strain. Add a little olive oil to pasta to stop it from sticking. To make the dressing, mix olive oil and balsamic together in a bowl until combined To serve, place pasta into a large mixing bowl. Add sage, walnuts, pumpkin, cos leaves and cheese. Season with salt and pepper.
