Red Lentils Pulse Pasta Spirals Amatriciana

250g San Remo Red Lentils Pulse Pasta Spirals
2 tbsp extra virgin olive oil
100g smoky bacon, diced
3 cloves garlic, smashed and chopped
1 tsp chilli flakes, or 1 small red chilli, chopped
400g can chopped tomatoes
Salt and pepper
Pecorino cheese, for grating
½ bunch basil leaves, torn


Place the bacon in a fry pan and gradually increase the heat until crispy and golden.

Add the garlic and chilli and begin to fry until lightly golden. Add in the tomatoes and cook for 5-8 minutes on high heat, stirring occasionally, and season with salt and pepper

While the sauce is cooking, add the pasta to a large pot of salted boiling water and as the packet says, set a timer for 8 minutes, but take the pasta out after 6. Finish cooking the pasta in the sauce with a little of the cooking water.

Add the basil and toss to combine. Serve with freshly grated pecorino cheese.
