Roast Pork Fillet with Prunes

2 tbs. olive oil
2 x 450g pork fillets
2 tbs. Dijon mustard
3 ripe tomatoes, quartered or 1 punnet of cherry tomatoes
150g prunes, pitted
2 cloves garlic, peeled
2 sprigs oregano, leaves picked
Salt and pepper


Brush the mustard all over the fillets of pork and place in a large baking dish.

Pre heat the oven to 190C.

Place the tomatoes, prunes, garlic and oregano around the pork fillets and drizzle with olive oil. Season the dish with salt and pepper and then bake in the oven for 15-20 minutes.
