Sausage and Roasted Capsicum Muffin Sandwich

4 Italian-style sausages 

2 jarred roasted red capsicums, roughly chopped 

4 eggs 

100ml mayonnaise 

4 English muffins, split in half

Salt and pepper


Heat a pan or BBQ over a medium heat. Add the sausage and cook for 4 - 5 minutes or until golden and cooked through. Remove and cool slightly before cutting in half lengthways.

Crack the eggs into the same pan or BBQ. Season with salt and pepper and cook to your liking. 

Toast the muffins.

Spread the mayonnaise generously onto each side of the muffins. Top with capsicum, sausage and egg then sandwich together.
