Squid Salad with Golden Kiwi Marinade

1 tsp extra virgin olive oil

4 x small-medium squid

1 x 2cm piece of ginger, finely julienned

1 long red chilli, finely sliced

2 clove garlic, finely sliced

2 x golden kiwi fruit, peeled

1 tsp fish sauce

Drizzle of sesame oil

1 lime, zest and juice

Salt & pepper

2 wombok cabbage leaves, finely sliced

1 large carrot, julienned

2 spring onion, finely sliced


Grate one of the kiwi fruits and place in the bowl with the ginger, chilli and garlic, fish sauce, sesame oil and lime zest. Season with salt and marinate for a few hours or even better overnight.

Heat a pan over high heat and flash fry the squid for a minute. Remove from the heat and add the lime juice.

Toss wombok cabbage, carrot, spring onions and extra diced kiwi fruit together and place on a plate. Top with squid.
