Supreme Cut Chicken Breast with Oven Roasted Tomato & Crusty Baguette

2 x supreme cut chicken breast with skin on*

250gms cherry tomatoes on the vine

salt & pepper

drizzle olive oil

2 x sprigs of thyme


Preheat oven to 180°C

Place seasoned chicken breasts skin down onto medium heat for 5 mins. While chicken is cooking, season tomatoes and toss with olive oil and sprigs of thyme and briefly add the tomatoes to the pan.  Transfer into preheated oven for 10 mins.

The tomatoes need to almost ‘pop’ so if they require longer (only 5 or so minutes), rest the chicken in the meantime. Don’t forget to reserve roasted tomato juices that remain in the roasting dish.  

This dish is perfect served with a crusty baguette, torn apart & reserved tomato juices.  

*get your butcher to do this for you. It’s simply a breast on the bone with the wing attached & frenched.
