Swordfish Skewers with Coriander & Mint Marinade

Servings 8-10 skewers to share


500g swordfish
Rice Bran oil

Juice and zest of 1 lime juice
1 bunch coriander, stem & roots also
½ bunch mint leaves
1 ½ tsp. grated ginger
40ml Rice Bran oil
3 drops of sesame oil
1 tsp. fish sauce
1 heaped tsp. brown sugar
1 tbs. soy sauce


Pre heat the BBQ or a griller pan.

To make the marinade, place all marinade ingredients into a blender and blend until smooth.

Place skewers in water and soak. This will ensure the stick will not splinter or burn on the BBQ.

Cut the swordfish into 3cm cubes and thread onto skewers. Season the fish with salt and pepper and drizzle with a little oil. Cook on the BBQ for no more then 1 minute on each side.

Place cooked skewers in the marinade and coat well with fragrant marinade. Arrange on a large platter and serve immediately.
