The Bills Burger

1kg wagyu beef mince
15g salt
4g pepper
20 slices kaiserfleisch (belly bacon)
10 eggs
10 large slices beetroot
10 slices pineapple
1 iceberg lettuce, torn and washed
3 tomatoes, sliced (one large slice per burger)
10 slices cheddar cheese
½ cup mayonnaise
Tomato ketchup
50 pickles
10 x 75gm soft buns (preferably from an Asian Bakery)
Clarified butter, melted


Mix salt and pepper through mince, weigh out to 100gm patties, flatten and lay out on greaseproof paper. Cook patties on a flat grill, or in a large non stick pan in batches for 2-3 minutes on each side. Put the cheese on top when you turn it over.  

Cook the eggs, bacon and pineapple on the grill or in a pan.  If space is an issue you can cook the bacon in the oven and do the eggs and pineapple in batches and keep warm in the oven.

Brush the inside of the buns with clarified butter and toast insides on a flat grill or pan.  
Build burgers from the bottom in the following order; bun, ketchup, pickles, pattie with cheese, mustard, bacon, pineapple, egg, beetroot, tomato, lettuce and bun top with mayo spread on it.
