Tuna, Lime, Coriander Gluten Free Spaghetti

300g gluten-free spaghetti

1 x (185g) can tuna

¼ cup extra virgin olive oil

2 shallots, finely chopped

1 garlic clove, sliced thinly

1 red chilli, deseeded, sliced thinly

1 lime, zested and juiced

1 tbsp capers

¼ cup coriander, chopped finely

Salt & pepper


Cook pasta as per packet directions.

Heat olive oil, garlic, chilli, shallots in a pan and cook for 3 minutes or until the shallots are soft.

Add lime zest, capers and tuna to the pan. Scoop 1 to 2 ladles of pasta water into the pan and stir.

Strain pasta and add to the pan. Mix and finally add coriander and lime juice. Season with salt and pepper.
