Veal and Asparagus Wraps with Rocket Salsa

2 tbsp olive oil
4 slices of veal, flattened out
8 asparagus spears
4 slices of prosciutto
4 slices of provolone
Salt and pepper

Rocket salsa
1 cup of rocket
½ cup parsley
¼ capers
½ clove garlic
Zest and juice of a lemon
2 anchovies
1/3 cup extra virgin olive oil
Salt and pepper


Pre heat the oven to 180°C

For the rocket salsa, place all ingredients, except the oil in a small food processor and blitz until combined. Place in a bowl and stir in the olive oil to form a loose salsa.

Arrange the thin slices veal on a flat surface. On each piece of veal add a piece of prosciutto, then a piece of provolone. Place two asparagus spears at one end of the veal and then wrap tightly. Hold the wrap in place with a toothpick.

Heat olive oil in a large frying pan (that can be also used in an oven) over a medium heat. Sear the veal wraps on each side for 2 minutes and bake in the oven for another 5 minutes.

Rest for 2 minutes before serving with the rocket salsa.
