Whipped Crème Fraiche and Goats Cheese with Balsamic Beans

3 large handfuls of green beans, top and tailed

200ml crème fraiche

1 tbsp whipping cream

100g soft goats cheese

½ tsp dried mint

Salt and pepper

1 clove garlic, minced

1 tbsp good quality aged balsamic vinegar

2 tbsp extra virgin olive oil


Bring a large pot of salted water to boil. Add the beans and bring back to the boil. Strain and immediately place in a bowl of iced water to stop the cooking process.

For the whipped crème, place the crème fraiche, whipping cream, goat’s cheese, mint and a pinch of salt into a food processor. Blitz until smooth and silky. Spread onto a medium shallow platter.

In a large bowl whisk the garlic, balsamic and extra virgin olive oil together. Add the drained and dried beans and toss thoroughly through the dressing. Place the bean salad on top of the whipped crème fraiche.
