Cook Time 15 Minutes
3 large zucchini
1 tbsp olive oil
3 garlic cloves, chopped
1 fresh red chili, chopped
10 fresh mini mozzarella balls, (bocconcini) sliced in half
½ jar kalamata olives, sliced in half
1 punnet grape tomatoes, cut in half
1 tbsp chopped fresh basil
Pinch of salt
Pinch freshly ground black pepper
Start by spriralizing the zucchini with the thickest noodle blade your spiralizer has. With your hands, squeeze out the excess liquid from the zucchini.
Fry oil and garlic and cook until golden, 30 seconds. Add the tomatoes, and fresh chilli, and season with 1/4 teaspoon salt and black pepper. Reduce the heat to low. Simmer until the tomatoes soften (about 5-10 minutes) then add the olives.
Increase heat to high, stir in the zucchini and basil, season with 1/4 teaspoon salt and cook 2 minutes. Add the mozzarella and serve right away.
