Zucchini, Pea, Bacon and Spirals Soup

Servings 2-4


San Remo Reg No16 Spirals 500g
70g butter
1½ cups peas
Grated parmesan
4 zucchinis, cut into quarter’s & sliced
3 tbsp extra virgin olive oil
150g bacon, diced
Salt & pepper
1 small onion, finely diced
1.5L chicken stock
¼ cup flat leaf parsley, chopped
1 ciabatta bread, sliced (serve with dish)

Heat the oil and butter in a pot, until butter is melted. Next add the onion and cook on a medium until softened, stirring occasionally. Add the bacon and cook for a further 3 mins. Add zucchini and peas and cook for 2 mins. Pour chicken stock into the pot and cover with a lid and bring to the boil. Add the pasta to the pot. Once stock returned to boil, reduce the heat and cook the pasta in the stock until pasta is al dente. Season with salt & pepper. Finally add parsley to pot and serve with parmesan over the pasta.
