Zucchini, Tomato & Chilli Wholemeal Spirals

1Pkt San Remo Wholemeal Spirals
6 zucchini flowers, sliced finely
2 zucchini, sliced finely
2tbsp crushed garlic
1 chilli, sliced finely
4tbsp olive oil
1cup chicken stock
1pnt assorted tomatoes cut in quarters
½ cup basil leafs
¼ cup pecorino, grated


  1. Heat olive oil, garlic and chilli in a large frying pan on medium heat.

  2. Add sliced zucchini and cook for 3 to 4mins, stirring continually.

  3. Meanwhile, cook pasta in salted boiling water for around 4-5 minutes, or when it’s ? cooked.

  4. Next add the tomatoes and chicken stock. Strain the pasta and add to the pan with a little of the pasta water. Cook for a further 2 mins.

  5. Add zucchini flowers and then turn the heat off.

  6. Tear basil into the pan and serve equally over 4 bowls. Top with pecorino.
